Welsh Rarebit Topped Pitta With Fried Eggs

Ingredients
- 2 Mission Wheat and White Pittas
- 400g[14oz] mature cheddar cheese, grated
- 4 tsp English mustard powder
- dash of bitter beer
- 6 egg yolks
- salt
- pepper
- 2 beef tomatoes each sliced into 6
- 4 fried eggs
Instructions
- Slice open pittas lengthways. Preheat the grill and toast pitta on one side only.
- Mix the cheese, beer and egg yolks together. Spread onto the uncooked side of the pitta.
- Place on the grill and cook until lightly browned.
- Top each with 3 slices of tomato and a fried egg. Serve.
