Welsh Rarebit Topped Pitta With Fried Eggs

Ingredients

  • 2 Mission Wheat and White Pittas
  • 400g[14oz] mature cheddar cheese, grated
  • 4 tsp English mustard powder
  • dash of bitter beer
  • 6 egg yolks
  • salt
  • pepper
  • 2 beef tomatoes each sliced into 6
  • 4 fried eggs

Instructions

  • Slice open pittas lengthways.  Preheat the grill and toast  pitta on one side only.
  • Mix the cheese, beer and egg yolks together. Spread onto the uncooked side of the pitta.
  • Place on the grill and cook until lightly browned.
  • Top each with 3 slices of tomato and a fried egg. Serve.
