Breakfast Pitta with Fried Egg & Crispy Bacon

Ingredients

  • 4 Mission Pitta
  • 250g[9oz] sausagemeat  made into 4 x 60g[2 ¼ oz] patties
  • 4 field mushrooms
  • 4 tbsp olive oil
  • Salt & pepper
  • 40g[1 ½ oz] baby spinach leaves
  • 4 eggs, fried
  • 250g [9oz] streaky bacon

Instructions

  • Preheat the grill to a moderate heat
  • Slice the pitta breads open lengthwise
  • Lightly toast the pittas
  • Drizzle the mushrooms with a little oil and season before grilling. Grill the bacon until crispy.
  • Fry the patties until golden, keep  them warm, while frying the eggs
  • To serve top each pitta with a few spinach leaves, bacon and a patty and top with a fried egg.
