Ingredients

  • 2 Mission Mediterranean Herb Pittas
  • 4 tbsp olive oil
  • 120g[4 oz] spinach, cooked
  • 4 medium poached eggs
  • 8 basil leaves
  • 250g[9 oz] cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper

Instructions

  • Preheat the oven to 220c/425f/gas7
  • Slice open the pittas, drizzle with a little oil and bake in the oven until toasted.
  • Into a frying pan add the cherry tomatoes, vinegar, oil and seasoning. Bring slowly to the boil and cook gently for 3-4 minutes, without tomatoes breaking up.
  • Place the spinach evenly over pitta halves, top with basil leaves and spoon over the tomatoes.
  • Top with a poached egg and serve immediately
