Ingredients

  • 4 Mission Pittas
  • 1 red onion, finely sliced
  • 1 avocado, diced
  • 8 tbsp thick, natural yoghurt
  • 2 tbsp pinenuts, toasted
  • 4 tbsp fresh mint, chopped
  • 2 tbsp white wine vinegar
  • Salt & pepper

Instructions

  • Mix all the ingredients together carefully. Check the seasoning. 
  • Slice open the pittas. Spoon the filling in and serve chilled.
